Tip of the Month: October 2015

As you harvest your vegetables, you may find yourself scraping of lots of skin off of potatoes, carrots and other kinds of scraps. These parts of the vegetables are just as useful, flavorful and nutritious as the normally edible part. If your vegetables are organic, this tip is right up your alley! Save all of the scraps and vegetable peels to make to your own vegetable broth. Gather all of your scraps and store them in the freezer. When you have enough, place them in a pot and cover with water. Let them simmer for an hour and strain the broth into an airtight container. Refrigerate it and use within the next few days.
