Individual Tabbouleh Salad

Time flies by quickly! It’s already half way through August, meaning summer is coming to an end. And with summer coming to an end, it’s time to prepare for the upcoming school year. I can be very picky when it comes to lunches for school. I don’t like to eat cafeteria food (let’s face it, who does?) but also don’t like to eat a simple PB&J sandwich with a cup of fruit. My school lunch normally consists of leftovers or something made fresh that morning. I take pride in making my lunch since I know that’s this 45 minute break is the one time where I can take a break and chat with my friends. 
IMG_9772This salad is very easy yet very flavorful. It’s very simple to whip up in the early mornings. The flavors complement each other in a way that brightens up any up gloomy work or school day. It’s zesty and has a bang! What more could you ask for?!?!IMG_9773

Individual Tabbouleh Salad

  • 2 tablespoons fine bulgur
  • 1 spring onion, chopped
  • 1/3 cup parsley, chopped
  • 1/2 cup mint, chopped
  • 3 cherry tomatoes, diced
  • 2 tablespoons olive oil
  • juice of 1/2 a lemon
  • 1/2 teaspoon sumac
  • salt and pepper, to taste


In a small bowl, place the bulgur and 2 1/2 tablespoons warm water. Let the bulgur soak for 15-20 minutes

In a container, combine all of the other ingredients. Drain the bulgur and add also.

Refrigerate until serving.
