Snap Crackle Pop…..Spiced Chickpeas! Yes, if you haven’t realized, we aren’t talking about the good old Rice Crispies but rather the little pearls of protein. Chickpeas are very healthy, if you didn’t catch on to that already, and are also very flavorful but mainly recognized as being the main component in hummus. Puree no more! It’s time to twist the way you see chickpeas.
These flavor bombs are perfect to top over a salad instead of croutons. They are also just as relish eaten by the handful. For this recipe, I wanted mine to have a spicy kick. But, you can technically add any kind of spice or herb to flavor them. You may be one of those people who likes chickpeas in hummus but isn’t a fan of them when eaten solo. Fear no more because this recipe is so versatile that you can find a way to add these protein packed legume into your day-to-day diet.
- 1 can chickpeas, rinsed
- 1 tablespoon cumin
- 1 tablespoon smoked paprika
- a pinch of cayenne (optional)
- 2 tablespoons olive oil
- pinch of salt and pepper, to taste
Preheat the oven to 400F.
In a small bowl mix all the ingredients together until the chickpeas are coated with spices.
Toss them onto a parchment paper lined baking sheet. Bake for 50minutes-1hour, tossing/flipping them over half way through.
Remove from the oven and let them cool off for 15 minutes.
Store in an air tight container until you’re ready to eat.
