4th of July celebrations usually involve a mountain of watermelon. If you hosted the big party or just have an extra watermelon lying around, try this recipe. Most likely, 4th of July weekend included many BBQ’s that served all kinds of food. For us, we hit food coma and need to take a break from heavy food and go back to the basics. This recipe contains feta and mint leaves making it a light meal with many powerful flavors.
The mint came from our own garden. Fresh mint flavors the watermelon and brings a cooling sensation to every mouthful! Anyhow, the recipe that YOU want to try is just below.
Flavorful Watermelon Salad
- 1/2 medium chopped red onion
- 3 tablespoons of lemon/lime juice
- 1/2 medium size watermelon
- 1/4 cup pitted and sliced Kalamata Olives
- 1/4 chopped mint
- 5 ounces crumbled Feta
- Pinch of Salt/Pepper
Combine the lemon juice and chopped onions in a large bowl, let sit for 10 minutes.
Add the watermelon, olives, mint, feta and salt/pepper. Chill for for 1 hour and serve.
