As summer comes along, children usually run after an ice cream truck chanting, “I scream, You scream, We all scream for ICE SCREAM!” In our household, that isn’t the case. Our love for chocolate had led us to the amazing creation of chocolate mousse. If you didn’t previously know, chocolate mousse is nice and airy… and rich. When we found out about Giada’s newest cookbook, we were surprised to see that there was a chocolate mousse recipe. But not just any kind of chocolate mousse,hers was a vegan recipe. Here’s the surprise to it…IT’S MADE OUT OF AVOCADOS! Our love for this has made it the number one desert in our family, hence our profile pic is of this decadent dessert.
When we have guests, we quickly whip it up before they arrive and serve it after the meal. Yes, the recipe is still very surprising to us so we like to have our guests try it and guess what’s in it. Most of them will not guess what’s in it .Try it(even if you don’t like avocado “straight up” and tell us what you think !
Surprising Chocolate Mousse
- 1/2 cup 85% dark chocolate
- 2 very ripe (8 ounce) avocados, peeled and pitted
- 1/2 cup agave
- 1/2 cup unsweetened cocoa powder
- 1/3 cup almond milk
- 1 tablespoon pure vanilla extract
- 1/4 teaspoon fine salt
- Fresh raspberries and mint, for garnish
Place the chocolate chips in a small bowl. Place over a small saucepan of barely simmering water. Stir until the chocolate is melted and smooth, about 3 minutes. Set aside to cool slightly.
Place the melted chocolate, avocados, agave, cocoa powder, almond milk, vanilla and salt in a food processor. Blend until smooth and creamy, scraping the sides of the bowl as needed. Spoon into glasses and refrigerate for at least 3 hours (can be prepared 1 day in advance). Garnish with fresh raspberries and serve.
